Checkout elanguages.org! I believe you can develop projects that interact with Spanish-speaking countries. Here's another post which you may find some collaborators, http://www.edutopia.org/groups/collaborators-wanted/38439. Feel free to start a new request in the collaborators' discussion group.

I am looking for an epal web site so my 6th graders can communicate with Spanish speakers in a Spanish speaking country via email. Gracias!
